Ingredients

  • Pizza dough - 1 large (store-bought or homemade)
  • Canned young jackfruit in brine - 400g, drained and rinsed
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Lemon juice - 1 tablespoon
  • Red onion - 1 small, thinly sliced
  • Bell pepper - 1 medium, sliced (any color)
  • Cherry tomatoes - 150g, halved
  • Spinach - 100g, fresh
  • Vegan feta cheese - 100g, crumbled
  • Black olives - 50g, pitted and sliced
  • Salt - to taste
  • Black pepper - to taste
  • Tomato sauce - 100g (for base)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the drained jackfruit, oregano, thyme, lemon juice, salt, and pepper to the pan. Cook for about 5-7 minutes, stirring occasionally, until the jackfruit is tender and starts to pull apart.
  4. On a floured surface, roll out the pizza dough to your desired thickness and shape. Transfer the dough to a baking sheet or pizza stone.
  5. Spread the tomato sauce evenly over the pizza base, leaving a small border around the edges.
  6. Layer the sautéed jackfruit mixture over the sauce, followed by the sliced red onion, bell pepper, cherry tomatoes, and fresh spinach.
  7. Sprinkle the crumbled vegan feta cheese and sliced black olives on top.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  9. Remove from the oven, let it cool for a few minutes, then slice and serve.
