Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpeas - 200 grams, cooked and drained
  • Oats - 50 grams, ground
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 200 grams
  • Bell pepper - 1/2, sliced
  • Black olives - 50 grams, pitted and sliced
  • Fresh basil - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another minute.
  3. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth. Add the sautéed onion and garlic, ground oats, parsley, oregano, cumin, salt, and pepper. Mix until well combined.
  4. Shape the mixture into small balls (about 2.5 cm in diameter) to make the vegan keftedes. You should get around 10-12 balls.
  5. On a baking sheet lined with parchment paper, place the keftedes and bake in the preheated oven for 20 minutes, turning halfway through until golden brown.
  6. While the keftedes are baking, roll out the pizza dough on a floured surface to your desired thickness.
  7. Transfer the rolled-out dough to a pizza stone or baking sheet. Spread the tomato sauce evenly over the dough.
  8. Once the keftedes are done, remove them from the oven and place them on top of the pizza along with sliced bell pepper and black olives.
  9. Bake the pizza in the oven for an additional 10-12 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, let cool for a moment, and garnish with fresh basil before slicing and serving.
