Ingredients
- Pizza dough - 200 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Chickpeas - 200 grams, cooked and drained
- Oats - 50 grams, ground
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 200 grams
- Bell pepper - 1/2, sliced
- Black olives - 50 grams, pitted and sliced
- Fresh basil - for garnish
Steps
- Preheat your oven to 220°C (428°F).
- In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another minute.
- In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth. Add the sautéed onion and garlic, ground oats, parsley, oregano, cumin, salt, and pepper. Mix until well combined.
- Shape the mixture into small balls (about 2.5 cm in diameter) to make the vegan keftedes. You should get around 10-12 balls.
- On a baking sheet lined with parchment paper, place the keftedes and bake in the preheated oven for 20 minutes, turning halfway through until golden brown.
- While the keftedes are baking, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or baking sheet. Spread the tomato sauce evenly over the dough.
- Once the keftedes are done, remove them from the oven and place them on top of the pizza along with sliced bell pepper and black olives.
- Bake the pizza in the oven for an additional 10-12 minutes, or until the crust is golden and crispy.
- Remove from the oven, let cool for a moment, and garnish with fresh basil before slicing and serving.
