Ingredients

  • Eggplant - 200 grams
  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Red onion - 1 medium
  • Garlic - 3 cloves
  • Olive oil - 3 tablespoons
  • Dried oregano - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and dice the eggplant, zucchini, and red bell pepper into bite-sized pieces.
  3. Peel and chop the red onion and garlic finely.
  4. In a large mixing bowl, combine the diced vegetables with the olive oil, oregano, smoked paprika, salt, and black pepper. Mix well to ensure all vegetables are coated.
  5. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.

  8. Stir in the chopped fresh parsley and lemon juice.
