- Zucchini - 150 grams
- Red bell pepper - 100 grams

- Garlic - 3 cloves
- Olive oil - 3 tablespoons
- Dried oregano - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Wash and dice the eggplant, zucchini, and red bell pepper into bite-sized pieces.
- Peel and chop the red onion and garlic finely.
- In a large mixing bowl, combine the diced vegetables with the olive oil, oregano, smoked paprika, salt, and black pepper. Mix well to ensure all vegetables are coated.
- Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
