- Dandelion greens - 100g
- Chicory - 100g
- Spinach - 100g
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
- Water - 500ml
Steps
- Wash the dandelion greens, chicory, and spinach thoroughly under cold water to remove any dirt or grit.
- In a large pot, bring the water to a boil and add a pinch of salt.
- Add the greens to the boiling water and cook for about 5-7 minutes until they are tender but still vibrant in color.
- Drain the greens and rinse under cold water to stop the cooking process. Squeeze out excess water gently.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
- Add the drained greens to the skillet, tossing them with the garlic and olive oil for another 2-3 minutes.
- Remove from heat, then drizzle with freshly squeezed lemon juice, and season with salt and black pepper to taste.
- Serve warm or at room temperature, garnished with additional lemon wedges if desired.
