Ingredients

  • Dandelion greens - 100g
  • Chicory - 100g
  • Spinach - 100g
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500ml

Steps

  1. Wash the dandelion greens, chicory, and spinach thoroughly under cold water to remove any dirt or grit.
  2. In a large pot, bring the water to a boil and add a pinch of salt.
  3. Add the greens to the boiling water and cook for about 5-7 minutes until they are tender but still vibrant in color.
  4. Drain the greens and rinse under cold water to stop the cooking process. Squeeze out excess water gently.
  5. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
  6. Add the drained greens to the skillet, tossing them with the garlic and olive oil for another 2-3 minutes.
  7. Remove from heat, then drizzle with freshly squeezed lemon juice, and season with salt and black pepper to taste.
  8. Serve warm or at room temperature, garnished with additional lemon wedges if desired.
