  • Pizza dough - 250 grams

  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Vegan feta cheese - 100 grams, crumbled
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  4. Brush the surface of the dough with olive oil to enhance flavor and crispiness.
  5. Bake the dough in the preheated oven for 10-12 minutes, or until lightly golden.
  6. While the dough is baking, prepare the toppings: in a mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and vegan feta cheese.
  7. Add the dried oregano, fresh parsley, salt, and black pepper to the vegetable mixture, and toss gently to combine.
  8. Once the pizza base is done, remove it from the oven and let it cool for a couple of minutes.
  9. Spread the vegetable mixture evenly over the pizza base.
  10. Return the pizza to the oven for another 5 minutes to warm the toppings.
