Ingredients

  • Giant white beans (dried) - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 250 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Soak the giant white beans in water overnight or for at least 8 hours. Drain and rinse before use.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
  3. Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
  4. Add the canned diced tomatoes, vegetable broth, soaked beans, oregano, thyme, salt, and black pepper. Stir well to combine.
  5. Bring the mixture to a gentle simmer, cover the pot, and cook for about 45 minutes, or until the beans are tender.
  6. Preheat the oven to 180°C (350°F).
  7. Transfer the bean mixture to a baking dish and bake in the preheated oven for 30 minutes, uncovered, until the top is slightly golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
