- Giant white beans (dried) - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Vegetable broth - 250 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Soak the giant white beans in water overnight or for at least 8 hours. Drain and rinse before use.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
- Add the canned diced tomatoes, vegetable broth, soaked beans, oregano, thyme, salt, and black pepper. Stir well to combine.
- Bring the mixture to a gentle simmer, cover the pot, and cook for about 45 minutes, or until the beans are tender.
- Preheat the oven to 180°C (350°F).
- Transfer the bean mixture to a baking dish and bake in the preheated oven for 30 minutes, uncovered, until the top is slightly golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
