Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Bell peppers (mixed colors) - 2 large
  • Tomatoes - 2 medium, diced
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the pasta according to package instructions until al dente, then drain and set aside.
  3. Slice the tops off the bell peppers and remove the seeds. Set the peppers aside.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped red onion and garlic, sautéing until translucent.
  5. Add the diced tomatoes, cooked pasta, parsley, dill, salt, and black pepper to the skillet. Mix well and cook for an additional 5 minutes.
  6. Stuff the mixture into the hollowed bell peppers, pressing down gently to pack the filling.
  7. Place the stuffed peppers upright in a baking dish. Pour vegetable broth around the peppers and drizzle lemon juice on top.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
  9. Remove from the oven and let cool for a few minutes before serving.
