- Pasta (penne or fusilli) - 200 grams
- Bell peppers (mixed colors) - 2 large
- Tomatoes - 2 medium, diced
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- Slice the tops off the bell peppers and remove the seeds. Set the peppers aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped red onion and garlic, sautéing until translucent.
- Add the diced tomatoes, cooked pasta, parsley, dill, salt, and black pepper to the skillet. Mix well and cook for an additional 5 minutes.
- Stuff the mixture into the hollowed bell peppers, pressing down gently to pack the filling.
- Place the stuffed peppers upright in a baking dish. Pour vegetable broth around the peppers and drizzle lemon juice on top.
- Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
- Remove from the oven and let cool for a few minutes before serving.
