- Young green jackfruit - 200 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Cucumber - 1/2, diced
- Tomato - 1 medium, diced
- Red onion - 1/4, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Vegan yogurt - 100 grams
- Dill - 1 tablespoon, chopped
- Garlic - 1 clove, minced
Steps
- Drain and rinse the young green jackfruit. Cut it into chunks and use your hands to shred it into a fish-like texture.
- In a bowl, mix olive oil, lemon juice, dried oregano, smoked paprika, garlic powder, salt, and black pepper. Add the shredded jackfruit and marinate for at least 15 minutes.
- While the jackfruit marinates, prepare the tzatziki sauce by combining vegan yogurt, diced cucumber, minced garlic, dill, and a pinch of salt in a bowl. Mix well and set aside.
- Heat a non-stick skillet over medium heat and add the marinated jackfruit. Cook for about 10-12 minutes, stirring occasionally, until heated through and slightly crispy.
- Warm the corn tortillas in a separate pan for about 1-2 minutes on each side until pliable.
- To assemble the tacos, place a generous amount of the jackfruit mixture on each tortilla. Top with diced tomato, red onion, and fresh parsley.
- Drizzle the tzatziki sauce over the filled tacos and serve immediately.
