- Firm tofu - 200 grams
- Lemon juice - 2 tablespoons
- Nutritional yeast - 3 tablespoons
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1/4 medium, thinly sliced
- Kalamata olives - 50 grams, pitted and halved
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
Steps
- Press the firm tofu for 10 minutes to remove excess moisture, then crumble it into a bowl.
- Add lemon juice, nutritional yeast, olive oil, dried oregano, garlic powder, and salt to the crumbled tofu. Mix well until combined, and set aside to marinate for 5 minutes.
- In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, kalamata olives, and chopped parsley.
- Add the marinated tofu mixture to the vegetable bowl and gently toss until everything is well incorporated.
- Season with black pepper to taste and serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
