Ingredients

  • Firm tofu - 200 grams
  • Lemon juice - 2 tablespoons
  • Nutritional yeast - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1/4 medium, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste

Steps

  1. Press the firm tofu for 10 minutes to remove excess moisture, then crumble it into a bowl.
  2. Add lemon juice, nutritional yeast, olive oil, dried oregano, garlic powder, and salt to the crumbled tofu. Mix well until combined, and set aside to marinate for 5 minutes.
  3. In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, kalamata olives, and chopped parsley.
  4. Add the marinated tofu mixture to the vegetable bowl and gently toss until everything is well incorporated.
  5. Season with black pepper to taste and serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
