Ingredients

  • phyllo pastry - 4 sheets
  • extra-virgin olive oil - 3 tablespoons
  • firm tofu - 200 grams, drained
  • nutritional yeast - 2 tablespoons
  • lemon juice - 2 tablespoons
  • dried oregano - 1 teaspoon
  • dried basil - 1 teaspoon
  • garlic powder - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • spinach - 100 grams, chopped
  • fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, crumble the drained tofu and combine it with nutritional yeast, lemon juice, dried oregano, dried basil, garlic powder, salt, and black pepper. Mix until well combined and creamy.
  3. Stir in the chopped spinach and fresh parsley into the tofu mixture until evenly distributed.
  4. Lay one sheet of phyllo pastry on a clean work surface and brush it lightly with olive oil. Place a second sheet on top and brush again. Repeat this process for a total of 4 layers.
  5. Spoon the tofu mixture onto the phyllo pastry, leaving space around the edges. Fold the edges over the filling to create a parcel and brush the top with olive oil.
  6. Place the pie on a baking tray and bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  7. Remove from the oven, let cool for a few minutes, then slice and serve warm.
