- phyllo pastry - 4 sheets
- extra-virgin olive oil - 3 tablespoons
- firm tofu - 200 grams, drained
- nutritional yeast - 2 tablespoons
- lemon juice - 2 tablespoons
- dried oregano - 1 teaspoon
- dried basil - 1 teaspoon
- garlic powder - 1/2 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- spinach - 100 grams, chopped
- fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, crumble the drained tofu and combine it with nutritional yeast, lemon juice, dried oregano, dried basil, garlic powder, salt, and black pepper. Mix until well combined and creamy.
- Stir in the chopped spinach and fresh parsley into the tofu mixture until evenly distributed.
- Lay one sheet of phyllo pastry on a clean work surface and brush it lightly with olive oil. Place a second sheet on top and brush again. Repeat this process for a total of 4 layers.
- Spoon the tofu mixture onto the phyllo pastry, leaving space around the edges. Fold the edges over the filling to create a parcel and brush the top with olive oil.
- Place the pie on a baking tray and bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
