Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Cherry tomatoes - 250 grams
  • Spinach - 100 grams
  • Vegan feta cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the pan and cook for about 5 minutes until they start to soften and burst.
  4. Stir in the spinach, dried oregano, salt, and pepper. Cook until the spinach wilts, about 2-3 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta. Add the drained pasta to the pan with the veggies.
  6. Crumble the vegan feta cheese over the pasta and mix well, adding reserved pasta water as needed to create a creamy sauce.
  7. Serve hot, garnished with fresh basil.
