- Pasta (penne or fusilli) - 200 grams
- Cherry tomatoes - 250 grams
- Spinach - 100 grams
- Vegan feta cheese - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes to the pan and cook for about 5 minutes until they start to soften and burst.
- Stir in the spinach, dried oregano, salt, and pepper. Cook until the spinach wilts, about 2-3 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta. Add the drained pasta to the pan with the veggies.
- Crumble the vegan feta cheese over the pasta and mix well, adding reserved pasta water as needed to create a creamy sauce.
- Serve hot, garnished with fresh basil.
