Vegan Fava

Vegan Fava is a delightful Greek dish made from creamy fava beans, infused with olive oil and fresh herbs. This simple yet satisfying dish can be served warm or at room temperature, making it perfect for any meal.

Ingredients

  • Fava beans - 200 grams
  • Water - 500 ml
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/2 teaspoon (optional)

Steps

  1. Rinse the fava beans under cold water and soak them in water for 1 hour.
  2. In a pot, combine the soaked fava beans and 500 ml of water. Bring to a boil, then reduce to a simmer.
  3. Cook the fava beans for about 30 minutes, or until soft. Stir occasionally and add more water if needed to prevent sticking.
  4. While the beans are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  6. Once the fava beans are tender, drain them and return to the pot. Use a potato masher or fork to mash the beans until smooth.
  7. Stir in the sautéed onion and garlic mixture, lemon juice, salt, black pepper, and paprika if using. Adjust seasoning to taste.
  8. Transfer the fava to a serving bowl, drizzle with the remaining olive oil, and garnish with chopped parsley.
  9. Serve warm or at room temperature with crusty bread or pita.
