- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Tomatoes (diced, fresh or canned) - 400 grams
- Vegetable broth - 250 ml
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomatoes, vegetable broth, dried oregano, salt, and black pepper. Bring the mixture to a simmer.
- Once simmering, add the green beans and cook for about 10 minutes until they start to soften.
- Add the pasta to the pot and continue to simmer for another 10 minutes, or until the pasta is cooked al dente and the sauce has thickened. Stir occasionally to prevent sticking.
- Adjust seasoning as needed, then remove from heat. Serve hot, garnished with fresh parsley.
