Ingredients
- Pasta (penne or fusilli) - 200 grams
- Cherry tomatoes - 250 grams, halved
- Fresh basil leaves - 1/2 cup, chopped
- Vegan mozzarella cheese - 100 grams, cubed
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the cooked pasta, cubed vegan mozzarella, chopped basil, balsamic vinegar, salt, and black pepper. Toss everything together until well combined.
- Cook for an additional 2-3 minutes until the vegan mozzarella starts to melt slightly.
- Remove from heat and garnish with extra basil leaves before serving.
