Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Cherry tomatoes - 250 grams, halved
  • Fresh basil leaves - 1/2 cup, chopped
  • Vegan mozzarella cheese - 100 grams, cubed
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the cooked pasta, cubed vegan mozzarella, chopped basil, balsamic vinegar, salt, and black pepper. Toss everything together until well combined.
  5. Cook for an additional 2-3 minutes until the vegan mozzarella starts to melt slightly.
  6. Remove from heat and garnish with extra basil leaves before serving.
