Steps
- Preheat the oven to 220°C (428°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced eggplant and sauté for about 5 minutes until softened.
- Add the zucchini, red bell pepper, red onion, and garlic to the skillet. Cook for another 5-7 minutes, stirring occasionally until the vegetables are tender.
- Stir in the tomato paste, balsamic vinegar, capers, and sliced olives. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes, then remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness, then transfer to a baking sheet or pizza stone.
- Spread the sautéed caponata mixture evenly over the pizza dough.
- Sprinkle the chopped fresh basil and nutritional yeast over the top.
- Drizzle with the remaining 1 tablespoon of olive oil.
