  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Capers - 1 tablespoon, rinsed
  • Green olives - 30 grams, sliced
  • Fresh basil - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (for a cheesy flavor)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced eggplant and sauté for about 5 minutes until softened.
  3. Add the zucchini, red bell pepper, red onion, and garlic to the skillet. Cook for another 5-7 minutes, stirring occasionally until the vegetables are tender.
  4. Stir in the tomato paste, balsamic vinegar, capers, and sliced olives. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes, then remove from heat.
  5. Roll out the pizza dough on a floured surface to your desired thickness, then transfer to a baking sheet or pizza stone.
  6. Spread the sautéed caponata mixture evenly over the pizza dough.
  7. Sprinkle the chopped fresh basil and nutritional yeast over the top.
