Ingredients
- Green cabbage - 1 medium head
- Cooked brown rice - 100 grams
- Cooked green lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and gently place the whole head into the boiling water for about 5-7 minutes until the leaves are softened. Remove and let cool.
- In a frying pan, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 5 minutes).
- In a large bowl, combine the cooked brown rice, cooked lentils, sautéed onion and garlic, tomato paste, chopped parsley, oregano, salt, and pepper. Mix well until all ingredients are well incorporated.
- Once the cabbage leaves are cool enough to handle, carefully peel off 8-10 leaves. Trim the thick part of the stem for easier rolling.
- Spoon about 2 tablespoons of the filling onto each cabbage leaf, fold the sides over the filling, and roll tightly from the stem end to the tip. Place seam-side down in a baking dish.
- Once all rolls are prepared, pour the vegetable broth and lemon juice over the cabbage rolls in the baking dish. Cover with foil.
- Bake in a preheated oven at 180°C (350°F) for 30-35 minutes. Remove from the oven and let sit for 5 minutes before serving.
