Ingredients

  • Green cabbage - 1 medium head
  • Cooked brown rice - 100 grams
  • Cooked green lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and gently place the whole head into the boiling water for about 5-7 minutes until the leaves are softened. Remove and let cool.
  2. In a frying pan, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 5 minutes).
  3. In a large bowl, combine the cooked brown rice, cooked lentils, sautéed onion and garlic, tomato paste, chopped parsley, oregano, salt, and pepper. Mix well until all ingredients are well incorporated.
  4. Once the cabbage leaves are cool enough to handle, carefully peel off 8-10 leaves. Trim the thick part of the stem for easier rolling.
  5. Spoon about 2 tablespoons of the filling onto each cabbage leaf, fold the sides over the filling, and roll tightly from the stem end to the tip. Place seam-side down in a baking dish.
  6. Once all rolls are prepared, pour the vegetable broth and lemon juice over the cabbage rolls in the baking dish. Cover with foil.
  7. Bake in a preheated oven at 180°C (350°F) for 30-35 minutes. Remove from the oven and let sit for 5 minutes before serving.
