- Cherry tomatoes - 100 grams, halved
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons
- Fresh basil - a handful, chopped
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, combine zucchini, eggplant, bell pepper, red onion, and cherry tomatoes with olive oil, minced garlic, oregano, salt, and black pepper. Toss to coat.
- Spread the vegetables evenly on a baking sheet and roast in the oven for 15 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or baking sheet.
- Once the vegetables are done roasting, take them out of the oven and spread them evenly over the pizza dough.

- Bake the pizza in the oven for an additional 10-12 minutes, or until the crust is golden brown.
