Ingredients

  • Pasta (whole wheat or gluten-free) - 200 grams
  • Zucchini - 1 medium, sliced
  • Eggplant - 1 small, diced
  • Red bell pepper - 1, chopped
  • Red onion - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine sliced zucchini, diced eggplant, chopped red bell pepper, sliced red onion, halved cherry tomatoes, minced garlic, olive oil, dried oregano, salt, and black pepper. Toss until the vegetables are well coated.
  3. Transfer the vegetable mixture to a baking dish and roast in the oven for 25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  4. Meanwhile, cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  5. Once the vegetables are roasted, add the cooked pasta to the baking dish and toss everything together. Drizzle with lemon juice and mix well.
  6. Serve warm, garnished with fresh chopped parsley.
