  • Spinach - 100 grams, fresh
  • Tofu - 150 grams, crumbled
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Olives - 50 grams, sliced
  • Vegan cheese - 100 grams, shredded

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add minced garlic and fresh spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
  4. In a bowl, combine the crumbled tofu, nutritional yeast, lemon juice, dried oregano, salt, and black pepper. Mix well to create a creamy filling.
  5. Add the sautéed spinach mixture to the tofu mixture and stir until combined.
  6. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  7. Transfer the rolled dough to a baking sheet lined with parchment paper.
  8. Spread the tofu and spinach filling evenly over the pizza base, leaving a small border around the edges.
  9. Top the pizza with halved cherry tomatoes, sliced olives, and shredded vegan cheese.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
