- Cherry tomatoes - 100 grams, halved
- Olives - 50 grams, sliced
- Vegan cheese - 100 grams, shredded
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add minced garlic and fresh spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
- In a bowl, combine the crumbled tofu, nutritional yeast, lemon juice, dried oregano, salt, and black pepper. Mix well to create a creamy filling.
- Add the sautéed spinach mixture to the tofu mixture and stir until combined.
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Spread the tofu and spinach filling evenly over the pizza base, leaving a small border around the edges.
- Top the pizza with halved cherry tomatoes, sliced olives, and shredded vegan cheese.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
