Ingredients

  • Cucumber - 1 medium, grated
  • Greek yogurt (full fat) - 200 grams

  • Fresh dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/4 small, thinly sliced
  • Bell pepper (any color) - 1/2, diced

Steps

  1. Grate the cucumber and place it in a clean kitchen towel. Squeeze out excess water and set aside.
  2. In a mixing bowl, combine Greek yogurt, minced garlic, chopped dill, lemon juice, olive oil, salt, and black pepper. Mix until well combined.
