Ingredients

  • Chicken breast - 200 grams
  • Cucumber - 100 grams (diced)
  • Cherry tomatoes - 150 grams (halved)
  • Red onion - 50 grams (thinly sliced)
  • Feta cheese - 50 grams (crumbled)
  • Greek yogurt - 100 grams
  • Garlic - 1 clove (minced)
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Dried dill - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Mixed salad greens - 100 grams

Steps

  1. Start by seasoning the chicken breast with salt, black pepper, and half of the olive oil. Grill or pan-cook the chicken over medium heat for about 6-8 minutes on each side, or until fully cooked.
  2. While the chicken is cooking, prepare the tzatziki dressing by mixing the Greek yogurt, minced garlic, lemon juice, dried dill, and a pinch of salt and black pepper in a bowl. Set aside.
  3. Once the chicken is cooked, let it rest for a few minutes before slicing it into bite-sized pieces.
  4. In a large bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, and crumbled feta cheese. Toss gently to mix the ingredients.
  5. Add the sliced chicken to the vegetable mixture and drizzle the tzatziki dressing over the top. Toss to combine, ensuring everything is evenly coated.
  6. Serve the Tzatziki Chicken Salad over a bed of mixed salad greens and drizzle with the remaining olive oil if desired.
