Ingredients
- Almond flour - 100g
- Psyllium husk - 10g
- Butter, melted - 50g
- Eggs - 2 large
- Feta cheese, crumbled - 100g
- Cream cheese, softened - 50g
- Parmesan cheese, grated - 30g
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - for brushing
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine almond flour, psyllium husk, and salt.
- Add melted butter and one egg to the dry ingredients and mix until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes to firm up.
- In another bowl, mix the crumbled feta, cream cheese, Parmesan cheese, the remaining egg, black pepper, and combine well.
- Once the dough is chilled, roll it out between two sheets of parchment paper into a rectangle about 0.5 cm thick.
- Cut the dough into squares or circles, depending on your preference for the pie shape.
- Place a spoonful of the cheese filling in the center of each piece of dough.
- Fold the dough over the filling and seal the edges by pressing with a fork.
- Place the pies on a baking sheet lined with parchment paper.
- Brush the tops with olive oil to help them brown.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
