Ingredients

  • Almond flour - 100g
  • Psyllium husk - 10g
  • Butter, melted - 50g
  • Eggs - 2 large
  • Feta cheese, crumbled - 100g
  • Cream cheese, softened - 50g
  • Parmesan cheese, grated - 30g
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - for brushing

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine almond flour, psyllium husk, and salt.
  3. Add melted butter and one egg to the dry ingredients and mix until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 15 minutes to firm up.
  5. In another bowl, mix the crumbled feta, cream cheese, Parmesan cheese, the remaining egg, black pepper, and combine well.
  6. Once the dough is chilled, roll it out between two sheets of parchment paper into a rectangle about 0.5 cm thick.
  7. Cut the dough into squares or circles, depending on your preference for the pie shape.
  8. Place a spoonful of the cheese filling in the center of each piece of dough.
  9. Fold the dough over the filling and seal the edges by pressing with a fork.
  10. Place the pies on a baking sheet lined with parchment paper.
  11. Brush the tops with olive oil to help them brown.
  12. Bake in the preheated oven for 25-30 minutes or until golden brown.
  13. Remove from the oven and let cool for a few minutes before serving.
