- Almond flour - 100 grams
- Eggs - 2 large
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Greek yogurt - 50 grams
- Olive oil - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, baking powder, salt, and black pepper.
- In another bowl, whisk the eggs, then add the olive oil, Greek yogurt, feta cheese, and ricotta cheese. Mix until smooth.
- Gradually add the dry ingredients to the cheese mixture, stirring until well combined. Fold in the dried oregano.
- Grease a small baking dish (about 20cm) with olive oil and pour the mixture into the dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and set.
- Remove from the oven and allow to cool slightly before slicing into squares. Serve warm.
