  • Vegetable broth - 300 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chopped tomatoes, dried oregano, salt, and black pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to break down.
