- Vegetable broth - 300 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped tomatoes, dried oregano, salt, and black pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to break down.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the long-grain rice, stir, and reduce the heat to low. Cover the pot and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and stir in the fresh parsley and lemon juice. Let it sit covered for an additional 5 minutes before serving.
