- Basmati rice - 150 grams
- Cherry tomatoes - 200 grams
- Red onion - 1 small (about 70 grams)
- Fresh parsley - 30 grams
- Feta cheese - 50 grams
- Egg - 1 large
- All-purpose flour - 30 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Water - 300 milliliters
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic; sauté until translucent.
- Add the soaked rice to the saucepan and stir for a couple of minutes. Pour in 300 milliliters of water, add salt, and bring to a boil. Reduce heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice cooks, prepare the tomato fritters. In a mixing bowl, chop the cherry tomatoes and finely dice the parsley. Combine them with the egg, feta cheese (crumbled), flour, paprika, salt, and black pepper, mixing well to form a batter.
- Heat the remaining 2 tablespoons of olive oil in a non-stick skillet over medium heat. Drop spoonfuls of the tomato mixture into the skillet and flatten slightly. Cook for about 3-4 minutes on each side until golden brown.
- Once the rice is cooked, fluff it with a fork and serve it on plates, topped with the crispy tomato fritters.
