Ingredients

  • Basmati rice - 150 grams
  • Cherry tomatoes - 200 grams
  • Red onion - 1 small (about 70 grams)
  • Fresh parsley - 30 grams
  • Feta cheese - 50 grams
  • Egg - 1 large
  • All-purpose flour - 30 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Water - 300 milliliters

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic; sauté until translucent.
  3. Add the soaked rice to the saucepan and stir for a couple of minutes. Pour in 300 milliliters of water, add salt, and bring to a boil. Reduce heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  4. While the rice cooks, prepare the tomato fritters. In a mixing bowl, chop the cherry tomatoes and finely dice the parsley. Combine them with the egg, feta cheese (crumbled), flour, paprika, salt, and black pepper, mixing well to form a batter.
  5. Heat the remaining 2 tablespoons of olive oil in a non-stick skillet over medium heat. Drop spoonfuls of the tomato mixture into the skillet and flatten slightly. Cook for about 3-4 minutes on each side until golden brown.
  6. Once the rice is cooked, fluff it with a fork and serve it on plates, topped with the crispy tomato fritters.
