Ingredients

  • ripe tomatoes - 250 grams, finely chopped
  • all-purpose flour - 75 grams
  • fresh parsley - 2 tablespoons, chopped
  • fresh mint - 1 tablespoon, chopped
  • red onion - 1 small, finely chopped
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - for frying

Steps

  1. In a large bowl, combine the finely chopped tomatoes, red onion, parsley, and mint.
  2. Add the flour, baking powder, salt, and black pepper to the mixture, and stir until well combined.
  3. Heat a non-stick frying pan over medium heat and add a generous amount of olive oil.
  4. Once the oil is hot, scoop about 2 tablespoons of the mixture and form it into a small patty, then carefully place it in the pan.
  5. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the cooked fritters from the pan and place them on a paper towel to absorb excess oil.
  7. Serve warm with a side of vegan yogurt or a simple salad.
