- all-purpose flour - 75 grams
- fresh parsley - 2 tablespoons, chopped
- fresh mint - 1 tablespoon, chopped
- red onion - 1 small, finely chopped
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - for frying
Steps
- In a large bowl, combine the finely chopped tomatoes, red onion, parsley, and mint.
- Add the flour, baking powder, salt, and black pepper to the mixture, and stir until well combined.
- Heat a non-stick frying pan over medium heat and add a generous amount of olive oil.
- Once the oil is hot, scoop about 2 tablespoons of the mixture and form it into a small patty, then carefully place it in the pan.
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the cooked fritters from the pan and place them on a paper towel to absorb excess oil.
- Serve warm with a side of vegan yogurt or a simple salad.
