Ingredients

  • Ripe tomatoes - 300 grams, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • All-purpose flour - 50 grams
  • Chickpea flour - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Pasta (spaghetti or your choice) - 200 grams
  • Lemon - 1, juiced
  • Cherry tomatoes - 100 grams, halved (for garnish)

Steps

  1. In a large mixing bowl, combine the grated tomatoes, chopped red onion, minced garlic, parsley, and mint. Mix well.
  2. In a separate bowl, whisk together the all-purpose flour, chickpea flour, baking powder, salt, and black pepper.
  3. Gradually add the dry mixture to the tomato mixture, stirring until just combined. The mixture should be thick enough to hold its shape.
  4. Heat olive oil in a frying pan over medium heat. Using a spoon, drop small amounts of the mixture into the hot oil, flattening them slightly to form patties.
  5. Fry the keftedes for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  6. Meanwhile, cook the pasta according to package instructions until al dente, then drain and toss with lemon juice and a drizzle of olive oil.
  7. Serve the tomato keftedes on top of the pasta, garnished with halved cherry tomatoes.
