  • Baking powder - 1 teaspoon

  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the diced tomatoes, crumbled feta cheese, chopped parsley, and finely chopped green onion.
  2. In another bowl, mix the all-purpose flour, baking powder, salt, and black pepper.
  3. Add the dry ingredients to the tomato mixture and stir until combined.
  4. Incorporate the beaten egg into the mixture until fully combined.
  5. Heat olive oil in a frying pan over medium heat.
  6. Spoon the mixture into the hot oil, forming fritters about 5 cm in diameter.
  7. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove the fritters from the pan and place them on a paper towel to absorb excess oil.
