Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Cherry tomatoes - 300 grams
  • Dairy-free feta cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, combine the cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat the tomatoes.
  3. Roast the tomatoes in the oven for 20 minutes until they are blistered and soft.
  4. While the tomatoes are roasting, cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  5. Remove the roasted tomatoes from the oven and use a fork to crush them slightly in the baking dish to create a sauce.
  6. Add the cooked pasta to the baking dish with the crushed tomatoes. Mix well, adding reserved pasta water as needed to achieve a creamy consistency.
  7. Stir in the dairy-free feta cheese and fresh basil, mixing gently to combine.
  8. Serve immediately, garnished with additional basil if desired.
