- Cherry tomatoes - 300 grams
- Dairy-free feta cheese - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh basil - 10 grams, chopped
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, combine the cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat the tomatoes.
- Roast the tomatoes in the oven for 20 minutes until they are blistered and soft.
- While the tomatoes are roasting, cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- Remove the roasted tomatoes from the oven and use a fork to crush them slightly in the baking dish to create a sauce.
- Add the cooked pasta to the baking dish with the crushed tomatoes. Mix well, adding reserved pasta water as needed to achieve a creamy consistency.
- Stir in the dairy-free feta cheese and fresh basil, mixing gently to combine.
- Serve immediately, garnished with additional basil if desired.
