Ingredients

  • Bulgur wheat - 50 grams
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 10 grams, finely chopped
  • Tomato - 1 medium (about 150 grams), diced
  • Cucumber - 1 small (about 100 grams), diced
  • Red onion - 1/4 medium (about 25 grams), finely chopped
  • Lemon juice - 30 ml (about 2 tablespoons)
  • Olive oil - 15 ml (about 1 tablespoon)
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the bulgur wheat under cold water, then place it in a bowl and cover with boiling water. Let it soak for about 15 minutes until tender.
  2. While the bulgur is soaking, prepare the vegetables and herbs by finely chopping the parsley, mint, tomato, cucumber, and red onion.
  3. After 15 minutes, drain any excess water from the bulgur and fluff it with a fork.
  4. In a large mixing bowl, combine the soaked bulgur, chopped parsley, mint, tomato, cucumber, and red onion.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad mixture and toss gently to combine.
  7. Finally, fold in the crumbled feta cheese, being careful not to break it down too much.
  8. Serve immediately, or let it chill in the refrigerator for about 30 minutes for the flavors to meld.
