Ingredients

  • Bulgar wheat - 50 grams
  • Water - 120 ml
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 10 grams, finely chopped
  • Tomato - 1 medium (about 150 grams), diced
  • Cucumber - 1 small (about 100 grams), diced
  • Red onion - 30 grams, finely chopped
  • Lemon juice - 30 ml
  • Olive oil - 20 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the bulgur wheat under cold water and then soak it in 120 ml of hot water for about 10-15 minutes until it is tender. Drain any excess water.
  2. In a large mixing bowl, combine the soaked bulgur, chopped parsley, mint, diced tomato, cucumber, and red onion.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
