Ingredients

  • Bulgar wheat - 100 grams
  • Fresh parsley - 50 grams, finely chopped
  • Fresh mint - 30 grams, finely chopped
  • Tomatoes - 200 grams, diced
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese (vegan) - 50 grams, crumbled (optional)
  • Kalamata olives - 50 grams, pitted and sliced

Steps

  1. Rinse the bulgar wheat under cold water, then soak it in boiling water for about 15 minutes or until it absorbs the water and becomes tender. Drain any excess water if necessary.
  2. In a large mixing bowl, combine the soaked bulgar wheat, chopped parsley, chopped mint, diced tomatoes, diced cucumber, and finely chopped red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.
  4. Pour the dressing over the bulgar wheat mixture and toss gently to combine all the ingredients evenly.
  5. If using, fold in the crumbled vegan feta cheese and sliced Kalamata olives.
  6. Let the salad sit for about 10 minutes before serving to allow the flavors to meld together.
