Ingredients

  • all-purpose flour - 100 grams
  • baking powder - 1 teaspoon
  • baking soda - 1/2 teaspoon
  • vanilla extract - 1 teaspoon
  • almond milk - 100 ml
  • coconut oil (melted) - 30 grams
  • sugar - 50 grams
  • lemon zest - 1 teaspoon
  • water - 150 ml
  • sugar (for syrup) - 100 grams
  • lemon juice - 30 ml
  • cinnamon stick - 1
  • orange peel - 1 strip

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small cake pan.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and sugar.
  3. In another bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the lemon zest.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the syrup by combining water, sugar, lemon juice, cinnamon stick, and orange peel in a saucepan over medium heat.
  9. Bring the mixture to a boil, then reduce heat and simmer for about 10 minutes until slightly thickened. Remove from heat and let it cool.
  10. Once the cake is done, remove it from the oven and let it cool slightly before removing it from the pan.
  11. Place the cake on a serving plate and pour the cooled syrup over the top, allowing it to soak into the cake.
  12. Let the cake sit for at least 20 minutes before serving to absorb the syrup.
