- all-purpose flour - 100 grams
- baking powder - 1 teaspoon
- baking soda - 1/2 teaspoon
- vanilla extract - 1 teaspoon
- almond milk - 100 ml
- coconut oil (melted) - 30 grams
- sugar - 50 grams
- lemon zest - 1 teaspoon
- water - 150 ml
- sugar (for syrup) - 100 grams
- lemon juice - 30 ml
- cinnamon stick - 1
- orange peel - 1 strip
Steps
- Preheat your oven to 180°C (350°F) and grease a small cake pan.
- In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and sugar.
- In another bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the lemon zest.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the syrup by combining water, sugar, lemon juice, cinnamon stick, and orange peel in a saucepan over medium heat.
- Bring the mixture to a boil, then reduce heat and simmer for about 10 minutes until slightly thickened. Remove from heat and let it cool.
- Once the cake is done, remove it from the oven and let it cool slightly before removing it from the pan.
- Place the cake on a serving plate and pour the cooled syrup over the top, allowing it to soak into the cake.
- Let the cake sit for at least 20 minutes before serving to absorb the syrup.
