  • Water - 6 tablespoons
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Red onion - 50 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Kalamata olives - 50 grams, pitted and sliced
  • Bell pepper - 1/2, thinly sliced
  • Spinach - 50 grams, fresh
  • Dairy-free yogurt - 100 grams
  • Cucumber - 50 grams, grated
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and chop the sweet potatoes into small cubes, then boil them in water for about 15 minutes or until tender.
  3. Drain the sweet potatoes and mash them in a bowl until smooth.
  4. In a separate bowl, mix the almond flour, ground flaxseed, salt, and olive oil with the mashed sweet potatoes until well combined.
  5. Add water gradually to form a dough, then shape the mixture into two pizza crusts on a baking sheet lined with parchment paper.
  6. Bake the crusts in the preheated oven for 20 minutes until slightly golden.
  7. While the crusts are baking, prepare the dairy-free tzatziki by mixing the yogurt, grated cucumber, minced garlic, lemon juice, dried oregano, and black pepper in a bowl.
  8. Remove the crusts from the oven, and top each with sliced red onion, cherry tomatoes, Kalamata olives, bell pepper, and fresh spinach.
  9. Return the pizzas to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
  10. Serve hot, drizzled with the prepared tzatziki sauce.
