- Sweet potatoes - 400 grams
- Almond flour - 100 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Oregano - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Fresh basil - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast in the oven for about 25 minutes, or until tender.
- Allow the sweet potatoes to cool slightly, then peel and mash them in a bowl until smooth.
- Add the almond flour, egg, salt, black pepper, oregano, and garlic powder to the mashed sweet potatoes. Mix until a dough forms.
- On a floured surface (using almond flour), divide the dough into 4 equal parts. Roll each part into a long rope, about 2 cm in diameter.
- Cut the ropes into 2 cm pieces to form the gnocchi. Optionally, use a fork to create ridges on each piece.
- Bring a large pot of salted water to a boil. Gently drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes.
- Using a slotted spoon, remove the gnocchi and place them on a plate.
- In a pan, heat the olive oil over medium heat and sauté the gnocchi for 2-3 minutes until slightly crispy.
- Serve hot, garnished with fresh basil.
