Ingredients

  • Sweet potatoes - 400 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Oregano - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Fresh basil - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast in the oven for about 25 minutes, or until tender.
  3. Allow the sweet potatoes to cool slightly, then peel and mash them in a bowl until smooth.
  4. Add the almond flour, egg, salt, black pepper, oregano, and garlic powder to the mashed sweet potatoes. Mix until a dough forms.
  5. On a floured surface (using almond flour), divide the dough into 4 equal parts. Roll each part into a long rope, about 2 cm in diameter.
  6. Cut the ropes into 2 cm pieces to form the gnocchi. Optionally, use a fork to create ridges on each piece.
  7. Bring a large pot of salted water to a boil. Gently drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes.
  8. Using a slotted spoon, remove the gnocchi and place them on a plate.
  9. In a pan, heat the olive oil over medium heat and sauté the gnocchi for 2-3 minutes until slightly crispy.
  10. Serve hot, garnished with fresh basil.
