Sweet Potato Burger

- Sweet potato - 200 grams, peeled and cubed
- Chickpeas - 1 cup, rinsed and drained
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 1/2 cup, ground into flour
- Olive oil - 1 tablespoon, for cooking
- Whole wheat pita bread - 2 pieces
- Tahini - 2 tablespoons, for serving
- Lemon juice - 1 tablespoon, for serving
- Fresh cucumber - 1/2, sliced, for serving
- Tomato - 1 medium, sliced, for serving
Steps
- Preheat your oven to 200°C (400°F).
- Boil the sweet potato cubes in a pot of water for about 10-15 minutes until tender, then drain and let cool.
- In a large bowl, mash the cooked sweet potatoes and chickpeas together using a fork or potato masher.
- Add the chopped red onion, minced garlic, parsley, dill, cumin, coriander, salt, and black pepper to the bowl. Mix well to combine.
- Gradually add the ground oats, mixing until the mixture holds together. If too wet, add more oats until it’s manageable.
- Form the mixture into two patties and place them on a baking sheet lined with parchment paper.
- Drizzle olive oil over the patties and bake in the preheated oven for about 20 minutes, flipping halfway through until golden brown.
- While the patties are baking, prepare the pita by warming it in a dry skillet over medium heat for 1-2 minutes on each side.
- To serve, spread tahini on each pita, place a sweet potato burger on top, and add slices of cucumber and tomato. Drizzle with lemon juice before serving.
