Ingredients

  • Cauliflower - 300 grams (for crust)
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sundried tomatoes - 100 grams (chopped)
  • Feta cheese - 75 grams (crumbled)
  • Fresh basil - 10 grams (chopped)
  • Olives (black or green) - 50 grams (sliced)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop the cauliflower into florets, then steam until tender, about 5-7 minutes.
  3. Drain the steamed cauliflower and let it cool slightly before placing it in a clean kitchen towel and squeezing out as much moisture as possible.
  4. In a mixing bowl, combine the drained cauliflower, egg, almond flour, olive oil, garlic powder, oregano, salt, and black pepper. Mix until a dough-like consistency forms.
  5. Line a baking tray with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1 cm thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  7. Remove the crust from the oven and spread the chopped sundried tomatoes evenly over the top.
  8. Sprinkle the crumbled feta cheese, sliced olives, and chopped basil over the sundried tomatoes.
  9. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is slightly melted.
  10. Remove from the oven, let cool for a few minutes, slice, and serve hot.
