Ingredients

  • 2 medium zucchini
  • 100 grams of cooked rice
  • 50 grams of feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh parsley, chopped
  • 1 tablespoon of fresh dill, chopped
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 tablespoon of lemon juice
  • 2 tablespoons of pine nuts, toasted

Steps

  1. Preheat your BBQ grill to medium heat.
  2. Cut the zucchini in half lengthwise and scoop out the flesh using a spoon, leaving about 1 cm of the shell intact.
  3. Chop the zucchini flesh and set aside.
  4. In a skillet, heat the olive oil over medium heat, then add the chopped onion and garlic, sautéing until translucent.
  5. Add the chopped zucchini flesh to the skillet and cook for another 3-4 minutes until softened.
  6. In a mixing bowl, combine the cooked rice, sautéed mixture, crumbled feta cheese, parsley, dill, oregano, lemon juice, pine nuts, salt, and pepper. Mix well to combine.
  7. Stuff the zucchini halves with the rice mixture, pressing down to pack it tightly.
  8. Place the stuffed zucchini on the grill, cut side up, and cook for about 20-25 minutes until the zucchini is tender and slightly charred.
  9. Remove from the grill and let cool for a few minutes before serving.
