Ingredients

  • Large ripe tomatoes - 4
  • Ground beef or lamb - 250 grams
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the tops off the tomatoes and scoop out the insides using a spoon, being careful not to break the shells.
  3. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  4. Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon.
  5. Stir in the crumbled feta cheese, parsley, oregano, salt, and black pepper, mixing well to combine.
  6. Stuff the hollowed tomatoes with the meat mixture, pressing down gently to pack them in.
  7. Place the stuffed tomatoes upright in a baking dish and drizzle a little olive oil on top.
  8. Bake in the preheated oven for 25-30 minutes, until the tomatoes are tender and slightly caramelized.
  9. Remove from the oven and let cool for a few minutes before serving.
