Ingredients
- Large ripe tomatoes - 4
- Ground beef or lamb - 250 grams
- Feta cheese - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Slice the tops off the tomatoes and scoop out the insides using a spoon, being careful not to break the shells.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon.
- Stir in the crumbled feta cheese, parsley, oregano, salt, and black pepper, mixing well to combine.
- Stuff the hollowed tomatoes with the meat mixture, pressing down gently to pack them in.
- Place the stuffed tomatoes upright in a baking dish and drizzle a little olive oil on top.
- Bake in the preheated oven for 25-30 minutes, until the tomatoes are tender and slightly caramelized.
- Remove from the oven and let cool for a few minutes before serving.
