Ingredients

  • Squid - 4 medium-sized (about 400g)
  • Cooked rice - 100g
  • Shrimp, peeled and chopped - 100g
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh dill, chopped - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Feta cheese, crumbled - 50g
  • Cherry tomatoes, halved - 100g

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the squid by removing the head and innards; rinse under cold water and set aside.
  3. In a bowl, mix the cooked rice, chopped shrimp, parsley, dill, garlic, lemon juice, olive oil, salt, black pepper, paprika, and feta cheese until well combined.
  4. Carefully stuff each squid with the rice mixture using a spoon, leaving a little space at the top for expansion.
  5. Place the stuffed squid in a baking dish and drizzle with additional olive oil and sprinkle with cherry tomatoes.
  6. Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the squid is tender and the stuffing is heated through.
  8. Serve warm, drizzled with more lemon juice if desired.
