- Squid - 4 medium-sized (about 400g)
- Cooked rice - 100g
- Shrimp, peeled and chopped - 100g
- Fresh parsley, chopped - 2 tablespoons
- Fresh dill, chopped - 1 tablespoon
- Garlic, minced - 2 cloves
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Feta cheese, crumbled - 50g
- Cherry tomatoes, halved - 100g
Steps
- Preheat the oven to 180°C (350°F).
- Clean the squid by removing the head and innards; rinse under cold water and set aside.
- In a bowl, mix the cooked rice, chopped shrimp, parsley, dill, garlic, lemon juice, olive oil, salt, black pepper, paprika, and feta cheese until well combined.
- Carefully stuff each squid with the rice mixture using a spoon, leaving a little space at the top for expansion.
- Place the stuffed squid in a baking dish and drizzle with additional olive oil and sprinkle with cherry tomatoes.
- Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the squid is tender and the stuffing is heated through.
- Serve warm, drizzled with more lemon juice if desired.
