Ingredients

  • Bell Peppers - 2 medium (any color)
  • Feta Cheese - 100 grams, crumbled
  • Spinach - 100 grams, fresh
  • Eggs - 2 large
  • Olive Oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes carefully.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. In a bowl, combine the wilted spinach, crumbled feta cheese, eggs, oregano, salt, and black pepper. Mix well.
  6. Stuff each bell pepper with the feta and spinach mixture, pressing down gently to pack it in.
  7. Place the stuffed peppers upright in a baking dish. If they don't stand up well, you can slice a small amount off the bottom to create a flat base.
  8. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the egg is set.
  9. Remove from the oven and let them cool for a few minutes before serving.
