- Bell Peppers - 2 medium (any color)
- Feta Cheese - 100 grams, crumbled
- Spinach - 100 grams, fresh
- Eggs - 2 large
- Olive Oil - 1 tablespoon
- Garlic - 1 clove, minced
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black Pepper - to taste
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes carefully.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a bowl, combine the wilted spinach, crumbled feta cheese, eggs, oregano, salt, and black pepper. Mix well.
- Stuff each bell pepper with the feta and spinach mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. If they don't stand up well, you can slice a small amount off the bottom to create a flat base.
- Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the egg is set.
- Remove from the oven and let them cool for a few minutes before serving.
