Ingredients

  • Red bell pepper - 2 large
  • Cooked quinoa - 1 cup
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams, pitted and chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Whole wheat burger buns - 2
  • Tzatziki sauce - 100 grams (for serving)
  • Mixed greens - 1 cup (for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the tops off the red bell peppers and remove the seeds and membranes.
  3. In a bowl, mix the cooked quinoa, crumbled feta cheese, chopped Kalamata olives, parsley, mint, minced garlic, olive oil, lemon juice, salt, and black pepper until well combined.
  4. Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
  5. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  6. Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
  7. While the peppers are baking, toast the whole wheat burger buns in a pan or oven until golden brown.
  8. To serve, place each stuffed pepper on a toasted bun, add a dollop of tzatziki sauce on top, and garnish with mixed greens.
