- Red bell pepper - 2 large
- Cooked quinoa - 1 cup
- Feta cheese - 100 grams, crumbled
- Kalamata olives - 50 grams, pitted and chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Whole wheat burger buns - 2
- Tzatziki sauce - 100 grams (for serving)
- Mixed greens - 1 cup (for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the tops off the red bell peppers and remove the seeds and membranes.
- In a bowl, mix the cooked quinoa, crumbled feta cheese, chopped Kalamata olives, parsley, mint, minced garlic, olive oil, lemon juice, salt, and black pepper until well combined.
- Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
- While the peppers are baking, toast the whole wheat burger buns in a pan or oven until golden brown.
- To serve, place each stuffed pepper on a toasted bun, add a dollop of tzatziki sauce on top, and garnish with mixed greens.
