Ingredients
- Grape leaves - 12-15 leaves
- Rice (short-grain or jasmine) - 100g
- Onion, finely chopped - 1 medium
- Fresh dill, chopped - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Mint leaves, chopped - 1 tablespoon
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250ml
Steps
- Rinse the grape leaves in cold water and soak them in hot water for about 10 minutes to soften. Drain and set aside.
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the rice and cook for another 2-3 minutes, allowing it to toast slightly.
- Add the dill, parsley, mint, lemon juice, salt, and black pepper to the rice mixture, stirring well to combine.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed. Remove from heat and let it cool for a few minutes.
- Lay a grape leaf on a flat surface, stem side towards you. Place about 1 tablespoon of the rice mixture at the base of the leaf. Fold the sides over the filling and roll it up tightly from the base to the tip, securing the filling inside. Repeat with the remaining leaves and filling.
- In a large pot, arrange the stuffed grape leaves seam side down in a single layer. Drizzle with the remaining olive oil and add enough water to cover the leaves.
- Cover the pot with a lid and simmer on low heat for about 30 minutes. Allow to cool slightly before serving.
