Ingredients
- Chickpeas - 200 grams, cooked and drained
- Quinoa - 100 grams, cooked
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Bell peppers - 2 large, halved and seeds removed
- Tahini - 2 tablespoons
- Cucumber - 1 small, grated
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
- Whole grain burger buns - 2
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, mash the cooked chickpeas with a fork until chunky.
- Add the cooked quinoa, chopped red onion, minced garlic, parsley, oregano, cumin, salt, and black pepper to the mashed chickpeas. Mix well until combined.
- Shape the mixture into two patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for 5-6 minutes on each side, or until golden brown.
- While the patties are cooking, place the halved bell peppers on a baking tray, cut side up. Roast in the preheated oven for about 15 minutes until slightly softened.
- In a small bowl, mix together tahini, grated cucumber, lemon juice, and water to create the sauce.
- Once the patties are cooked and the bell peppers are roasted, assemble the burgers by placing a patty inside each bell pepper half.
- Serve the stuffed bell pepper burgers on whole grain buns and drizzle with cucumber-tahini sauce.
