Ingredients

  • 2 large artichokes
  • 100g feta cheese, crumbled
  • 50g almond flour
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Water for steaming

Steps

  1. Prepare the artichokes by trimming the stem and removing the outer leaves until you reach the tender, lighter-colored leaves.
  2. Cut the top inch off each artichoke and use a spoon to scoop out the fuzzy choke in the center.
  3. In a bowl, mix together the crumbled feta cheese, almond flour, chopped parsley, chopped dill, minced garlic, olive oil, lemon zest, and lemon juice. Season with salt and pepper to taste.
  4. Stuff the artichokes generously with the cheese mixture, pressing it down between the leaves.
  5. Place the stuffed artichokes in a steamer basket over boiling water, cover, and steam for about 30 minutes or until the outer leaves can be easily pulled off.
  6. Once cooked, remove from the steamer and let cool slightly before serving.
