- 2 large artichokes
- 100g feta cheese, crumbled
- 50g almond flour
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Water for steaming
Steps
- Prepare the artichokes by trimming the stem and removing the outer leaves until you reach the tender, lighter-colored leaves.
- Cut the top inch off each artichoke and use a spoon to scoop out the fuzzy choke in the center.
- In a bowl, mix together the crumbled feta cheese, almond flour, chopped parsley, chopped dill, minced garlic, olive oil, lemon zest, and lemon juice. Season with salt and pepper to taste.
- Stuff the artichokes generously with the cheese mixture, pressing it down between the leaves.
- Place the stuffed artichokes in a steamer basket over boiling water, cover, and steam for about 30 minutes or until the outer leaves can be easily pulled off.
- Once cooked, remove from the steamer and let cool slightly before serving.
