Ingredients
- Beef stew meat - 400 grams
- Red onion - 1 large, sliced
- Garlic cloves - 3, minced
- Olive oil - 2 tablespoons
- Red wine vinegar - 2 tablespoons
- Crushed tomatoes - 200 grams
- Bay leaves - 2
- Cinnamon stick - 1
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Carrots - 2 medium, sliced
- Bell pepper - 1 medium, chopped
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a large pot over medium heat. Add sliced red onion and sauté until softened, about 5 minutes.
- Add minced garlic and beef stew meat to the pot, browning the meat on all sides for about 10 minutes.
- Stir in the red wine vinegar, crushed tomatoes, bay leaves, cinnamon stick, oregano, salt, and black pepper. Bring to a simmer.
- Cover and reduce the heat to low. Let it cook for about 60 minutes, stirring occasionally.
- After 60 minutes, add the sliced carrots and chopped bell pepper. Stir to combine and cover again.
- Continue to simmer for another 20-30 minutes, or until the beef is tender and the vegetables are cooked through.
- Remove bay leaves and cinnamon stick before serving. Garnish with fresh parsley.
