Ingredients

  • Beef stew meat - 400 grams
  • Red onion - 1 large, sliced
  • Garlic cloves - 3, minced
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 2 tablespoons
  • Crushed tomatoes - 200 grams
  • Bay leaves - 2
  • Cinnamon stick - 1
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Carrots - 2 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a large pot over medium heat. Add sliced red onion and sauté until softened, about 5 minutes.
  2. Add minced garlic and beef stew meat to the pot, browning the meat on all sides for about 10 minutes.
  3. Stir in the red wine vinegar, crushed tomatoes, bay leaves, cinnamon stick, oregano, salt, and black pepper. Bring to a simmer.
  4. Cover and reduce the heat to low. Let it cook for about 60 minutes, stirring occasionally.
  5. After 60 minutes, add the sliced carrots and chopped bell pepper. Stir to combine and cover again.
  6. Continue to simmer for another 20-30 minutes, or until the beef is tender and the vegetables are cooked through.
  7. Remove bay leaves and cinnamon stick before serving. Garnish with fresh parsley.
