Ingredients
- Beef chuck - 300 grams, cut into cubes
- Red onions - 4 medium, sliced
- Garlic - 4 cloves, minced
- Carrots - 2 medium, sliced
- Tomato paste - 2 tablespoons
- Red wine vinegar - 2 tablespoons
- Olive oil - 2 tablespoons
- Bay leaves - 2
- Cinnamon stick - 1
- Allspice berries - 5
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the sliced red onions and sauté until they are translucent, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the beef cubes. Brown the meat on all sides, approximately 5-7 minutes.
- Stir in the tomato paste, red wine vinegar, and mix well to coat the meat.
- Add the sliced carrots, bay leaves, cinnamon stick, allspice berries, salt, and black pepper to the pot.
- Pour in the water, bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 1 hour, stirring occasionally.
- After 1 hour, check the tenderness of the beef. If needed, simmer for an additional 30 minutes.
- Once the meat is tender and the sauce has thickened slightly, remove the pot from heat and discard the bay leaves and cinnamon stick.
- Serve hot, garnished with fresh parsley.
