Ingredients

  • Beef chuck - 300 grams, cut into cubes
  • Red onions - 4 medium, sliced
  • Garlic - 4 cloves, minced
  • Carrots - 2 medium, sliced
  • Tomato paste - 2 tablespoons
  • Red wine vinegar - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Bay leaves - 2
  • Cinnamon stick - 1
  • Allspice berries - 5
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the sliced red onions and sauté until they are translucent, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the beef cubes. Brown the meat on all sides, approximately 5-7 minutes.
  4. Stir in the tomato paste, red wine vinegar, and mix well to coat the meat.
  5. Add the sliced carrots, bay leaves, cinnamon stick, allspice berries, salt, and black pepper to the pot.
  6. Pour in the water, bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 1 hour, stirring occasionally.
  7. After 1 hour, check the tenderness of the beef. If needed, simmer for an additional 30 minutes.
  8. Once the meat is tender and the sauce has thickened slightly, remove the pot from heat and discard the bay leaves and cinnamon stick.
  9. Serve hot, garnished with fresh parsley.
