Ingredients

  • Fresh spinach - 200 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, peeled and diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and potato, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 10 minutes, or until the potato and carrot are tender.
  6. Add the fresh spinach and cook for an additional 5 minutes until wilted.
  7. Remove from heat and blend the soup until smooth using an immersion blender or standard blender.
  8. Stir in the lemon juice, chopped dill, salt, and black pepper to taste.
  9. Serve hot, garnished with additional dill if desired.
