- Fresh spinach - 200 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, peeled and diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and potato, cooking for another 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 10 minutes, or until the potato and carrot are tender.
- Add the fresh spinach and cook for an additional 5 minutes until wilted.
- Remove from heat and blend the soup until smooth using an immersion blender or standard blender.
- Stir in the lemon juice, chopped dill, salt, and black pepper to taste.
- Serve hot, garnished with additional dill if desired.
