  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the fresh spinach to the skillet, stirring until wilted, about 3-5 minutes.
  5. Incorporate the cauliflower rice into the skillet, mixing well with the spinach and onion.
  6. Season with dried oregano, salt, and black pepper, cooking for another 5-7 minutes until the cauliflower rice is tender.
  7. Remove from heat and stir in crumbled feta cheese and lemon juice.
