- Almond flour - 150 grams
- Eggs - 2 large
- Spinach - 200 grams, fresh or frozen
- Feta cheese - 100 grams, crumbled
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
- Water - 50 milliliters
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the spinach to the skillet and cook until wilted (if using fresh) or heated through (if using frozen), about 3-5 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the almond flour, 1 egg, salt, black pepper, and oregano to form a dough.
- Press the dough into the bottom and sides of a greased pie dish (approximately 20 cm in diameter).
- In another bowl, mix the cooked spinach and onion with the crumbled feta cheese and the remaining egg until well combined.
- Pour the spinach and feta mixture into the prepared crust, spreading it evenly.
- Bake in the preheated oven for 20-25 minutes or until the top is golden brown and the filling is set.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
