Ingredients

  • Almond flour - 150 grams
  • Eggs - 2 large
  • Spinach - 200 grams, fresh or frozen
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Water - 50 milliliters

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the spinach to the skillet and cook until wilted (if using fresh) or heated through (if using frozen), about 3-5 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the almond flour, 1 egg, salt, black pepper, and oregano to form a dough.
  5. Press the dough into the bottom and sides of a greased pie dish (approximately 20 cm in diameter).
  6. In another bowl, mix the cooked spinach and onion with the crumbled feta cheese and the remaining egg until well combined.
  7. Pour the spinach and feta mixture into the prepared crust, spreading it evenly.
  8. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and the filling is set.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
